Keto Chocolate Chip Cookie
Today’s Recipe Is a savior of my sugar cravings. My Keto Chocolate Chip Cookie sweetened with Monk Fruit is here finally. When I took my very first bite, I was blown away. I honestly couldn’t believe how similar it tasted to the traditional chocolate chip cookie.
One of many things I’ve learned while being on keto is that my sweet tooth still exists. Like seriously, my craving for something sweet comes pretty often. It was something I was indeed a bit concerned about when starting keto.
The goal of being in ketosis is to promote more fat burning. Becoming more Insulin sensitive, rather than being Insulin resistant for long periods of my life, has been stressful. This was mainly going to be challenging at first because I love chocolate. I thought. First, there wasn’t a natural way to enjoy chocolate without spiking my blood sugar, but there is.
After doing some research, I’ve come to find out that just a few sugar alcohols can be used to recreate our guilty pleasures. I also found out that not all sugar alcohols are suitable for you.
Those sugar alcohols are measured on something called the Glycemic Index. Well, why Is this important? This is important because you need to know that not everything that says “sugar-free” is sugar-free.
On the glycemic index Maltodextrin is the highest. This means when consumed, it is formed into sugar in the body. That’s not good since that would spike your blood sugar and knock you out of ketosis.
Monk Fruit & Stevia are 0 on the glycemic index. You will not trigger an insulin response with these sweetness or sugar alcohols.

Keto Chocolate Chip Skillet Cookie
Ingredients
Wet Ingredients
- 3 Eggs
- 1/2 tbsp Vanilla Extract
- 1 tbsp Melted unsalted Butter
- 1/2 tbsp Almond milk (Optional)
Dry Ingredients
- Almond Flour
- 1 1/2 tbsp Monk Fruit
- Keto Chocolate Chips
- 1/2 tsp salt
- 1 tsp Baking Powder
Instructions
- Preheat Oven to 350°F
- In a bowl, crack open 3 eggs.
- Add Vanilla extract.
- Melt butter and add to bowl.
- Add almond milk (optional)
- Mix well using a spatula or a whisky.
- Add dry ingredients to bowl and whisk.
- Once your consistency has been reached, place into a greased skillet.
- Place skillet into oven. Bake for 30 minutes.
- Once done, let it cool for 10 minutes.
