I honestly feel like my recipe comes close, and I’ve tried everything. I know that the ingredients used are great for anyone on keto.

Keto Fluffy Buttermilk Pancakes
Ingredients
- 8 tbsp Almond Flour (Coconut Flour Optional)
- 3 Eggs
- 2 tbsp Buttermilk
- 1 tbsp Melted Butter
- 2 tbsp Monk Fruit Sweetener
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
- Sugar Free Syrup
Instructions
- Preheat Cast Iron Skillet to medium low.
- In a bowl crack open 3 eggs, then whisk.
- To your bowl add buttermilk.
- To your bowl add your melted butter.
- To your bowl add vanilla extract.
- Whisk all together evenly.
- To your bowl add Almond Flour. (Coconut Flour Optional)
- Last add your monk fruit sweetener to your bowl.
- Whisk until your desired consistency. Add water to even out mix if it's too thick.
- To your Cast Iron Skillet pour 2-3 tbsp of pancake batter. 2x the amount for a bigger pancake.
- Cook for 2 minutes until small bubbles form. Flip and cook for 1 minute.
- Plate and pour syrup to your liking.
