Keto Lemon Parmesan Fried Gizzards
Keto lemon parmesan fried gizzards are an appetizer so good you might consider counting how many you pop into your mouth. These crispy, tender, juicy bundles of keto joy are so tasty and go great with a creamy ranch dressing.
When I looked through my freezer, this creation came to mind, looking for anything to make a quick, delicious snack. I came across a pack of gizzards initially an idea for a soup long ago. It then dawned on me, “can I make keto lemon parmesan fried gizzards?” The flavor choice of the gizzards alone made it more enticing for me to add to my creations. At that point, I was ready to get started.
Tenderizing. Preparing gizzards require a little time to get right, so I knew it wouldn’t be a quick snack when caught by surprise. Gizzards need to be tender before getting them deep-fried. I’m sure there are many ways to tenderize meats, but all tenderizing requires some time in the process. Once that process is done, these gizzards will be very quick to make.
Breading. Getting your gizzards crispy requires a keto breading that crisps well. I use a combination of pork rinds, almond flour & grated parmesan cheese. I typically use a food processor to combine those ingredients for my breading, but I’ve seen pre-crushed pork rinds available on the market. It works very well for me to get a good crispy that resembles an average fried product.
Frying. The most important part when deciding what to eat for me always comes down to is my body’s response to the foods. I always use healthy oils that contain no trans fats when I fry food. Keto Lemon Parmesan Fried Gizzards
Equipment
- Air Fryer optional
Ingredients
- 1 pack Chicken Gizzards
- 2 cup Low Sodium Chicken Stock
- 1 cup Water
- 1 Egg
- 1 1/2 tbsp Heavy Cream
- 1 tbsp Rosemary
- 1 tbsp Garlic salt Or Garlic Powder
- 1 tbsp Lawry's seasoning
- Olive Oil Spray
Keto Breading Mix
- Crushed Pork Rinds
- 1/2 cup Almond Flour
- 1/2 cup Grated parmesan cheese
- 1/2 tbsp Garlic Powder
- 1/2 tbsp Onion Powder
Instructions
- Preheat Deep Fryer to 350° F
- Add chicken stock & water to a pot and set to medium-high to start a simmer.
- Wash and peel chicken gizzards, removing unwanted fat & skin.
- Add the washed and peeled gizzards to your heating pot.
- Season your chicken stock and water with rosemary, garlic salt, and Lawry's seasoning.
- Set to a simmer for 30 minutes or until tender.
- Remove chicken gizzards from pot and cool for 10 minutes or until fully cooled.
- In a separate bowl, whisk together 1 Egg & Heavy Cream until even consistency.
- Add cooled gizzards into the egg mixture and mix thoroughly.
- In your keto breading station, mix your crushed pork rinds, almond flour, and grated parmesan cheese using your food processor or by hand.
- Add gizzards to keto breading mix and coat gizzards thoroughly.
- Shake excess keto breading off and place into deep fryer.
- Fry for 3 minutes or until golden brown.
- Remove and let the gizzards cool before serving.
- Enjoy!
Air Fried Alternative
- Place coated gizzard into air fryer
- Spray Olive Oil over gizzards to ensure a crisp cooking process
- Air fry at 375° F for 10 minutes or until golden brown.
