Preheat oven to 400°
Thoroughly wash and dry your cut of chicken.
In a bowl crack open two eggs and whisk together.
Keep whisking and slowly add your buttermilk & Hot Sauce.
Place your chicken in the mixture and coat thoroughly. Place in fridge for 10 minutes, while you gather your dry ingredients.
In a Food Processor add your dry ingredients and blend. Place your keto breading in a bag or container to coat the chicken when time.
In your keto breading station, place chicken from the egg mixture to the dry mixture, then place on baking rack.
Repeat until all is breaded and on the rack. Then place into over for 35-40 minutes.
While the chicken is cooking prepare you spicy mayonnaise by mixing all the ingredients together.
3 minutes before the chicken is done toast your buns.
Remove Chicken from oven and allow it to cool down for 5 minutes.
