Pre Heat Cooking Wok to Medium High.
Wash and dry pork ribs and set on a cutting board.
Cut pork ribs into even cubes and place them into a bowl.
In a separate pot, fill halfway with water and set it to a boil.
Once the boiling water is ready, carefully cook your pork ribs for 3 minutes.
After 3 minutes, remove and drain.
Add some olive oil and cook your pork ribs until a light golden brown. In your wok.
Add your soy sauce & rice vinegar and cook for an additional 5 minutes.
Cover your pork ribs with just enough hot water to cook down for 35 minutes on a simmer. This will help tenderize the meat.
Once the water has reduced, add dark soy sauce, brown monk fruit sweetener, Korean Chili Paste, Black Pepper, and a pinch of salt.
Cook for 5 minutes.
Plate and serve!
